Yields 10 people
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Put the listed items inside a pot, bring to a gentle boil, stirring to dissolve. Then, take off the burner and leave to cool completely. Transfer to a sealable bottle, seal and refrigerate it chilled, it can be stored for about a month.
For the Premix: Mix all the liquids into one large bottle, let it rest for 60 minutes, then filter it best through cheesecloth, so it's fully clarified.
For serving: Measure 85ml from the batch mix into a cocktail shaker filled with ice, and agitate carefully for a minute to cool it down. Filter into a chilled martini glass or similar, decorate with some cranberries adding the final touch by giving it a brief mist of mandarin oil above the glass.
